The estate, pleasantly placed on the hills of Castellina in Chianti, in the Sienese area of the Chianti Classico, spans over 380 hectares, of which 90 of vineyards located at an average altitude of about 250 metres, which is considered optimal for the production of great Tuscan quality wines. The winery’s philosophy is reflected in a work the least invasive as possible in the vineyards and in the wine-making processes, in the deep respect for nature, in the patient and careful selection of Tuscan native grapes (Sangiovese, Canaiolo), in keeping low yeld per hectare of vineyard, in the symbiosis between nature and animals of the area. What is unique about the Casale dello Sparviero is definitely the terroir, which determines the quality of its wines, in support of the adage “Nature does nothing in vain”. In the cellars with the ancient vaulted ceiling, great red wines continue their natural evolution resting in precious wood: large oak barrels, tonneaux and French barriques.
